去年のオープン時に使用していた豆がグレードアップして帰ってきました。

この農園のオーナーである Jesus BedoyaはイギリスのBBCで [The man who saved Colombian Coffee] として取り上げられるほどのこだわりと向上心を持っています。

そんなChucho(彼の愛称)が、完成させたこのクレイジーなコーヒーは同一品種を1000時間発酵したものと700時間発酵したものをブレンドしています。プロセスはしっかりと管理され、アナエロビックらしさとまろやかで綺麗な後味が両立しています。

フルボディの赤ワインのようなコクと少しのタンニン、ブラッドオレンジや赤ブドウ等の深い赤色をしたフルーツの酸味、ダークチョコレートやバニラの香りのような余韻を楽しませてくれます。

The owner of this farm, Jesus Bedoya, is so dedicated and ambitious that he was featured on the BBC as [The man who saved Colombian Coffee].

Chucho (as he is affectionately known) has made this crazy coffee, which is a blend of the same variety fermented for 1000 hours and 700 hours. The process is well controlled and has both an Anaerobic character and a mellow, clean finish.

The coffee offers the richness of a full-bodied red wine, a little tannin, the acidity of deep red fruits such as blood orange and red grapes, and a lingering finish that smells like dark chocolate and vanilla.
