A natural process coffee from Cherbesa village in Ethiopia's Gedio region, rich in history. The cool highland climate and traditional sun-drying process concentrate the fruit's sweetness into every cup.
Cherbesa village lies at an altitude of approximately 1,950–2,200 metres, where various smallholders cultivate heirloom varieties beneath the shade of surrounding semi-tropical forests. Fully ripened cherries are gathered at the local washing station and carefully sun-dried to enhance their sugar content.
This natural lot offers a juicy fruitiness reminiscent of blueberries and yellow peaches, with a deep sweetness akin to caramel and brown sugar. Its velvety texture further enhances the rich sweetness.
As evidenced by its popularity among roasters worldwide, this coffee from the smallholders of Cherbesa Village carries on the tradition of garden coffee, deeply intertwined with daily life, while developing into a specialty coffee with a character worthy of global recognition.
