CCD(Creativa Coffee District)は2018年に生まれたPanamaで今までの常識を打ち破るようなプロセスを行う変態集団です。ColombiaのLa Palma y El Tucanと資本を同じくしている所からも精製されるコーヒーのクオリティが伺えます。

このロット M41 は祖母の代から農園を受け継いだ3代目 Martha が栽培するRed CatuaiとYellow CatuaiのMixです。彼女の祖母が趣味で始めたコーヒー栽培は今や彼女の心と魂が注がれた高品質なチェリーへと成長し、CCDの精製に相応しいものとなりました。

Static Cherry Processは彼らが伝統を置き去りにし、新たに追求したプロセスです。80時間の嫌気環境での発酵を施し、カップの乳酸を発達させ深い色のフルーツをより感じ、クリーミーなボディを作ります。発酵が終了し20日間のPatioでの乾燥が始まります。チェリーの除去が完了したら密度とサイズで選別されます。その後色の違いでの選別がされ、さらに最後のクオリティチェックが入ります。

ルビーグレープフルーツや赤ブドウのような赤い果実とドライパイナップルやドライキウイなどキリッとした酸味の中に熟成された甘さを感じます。ダークチョコレートのような香りとコクもあり飲み終えた後も長い余韻に浸れます。

 

The CCD (Creativa Coffee District) is a group of creatives set to spark collaboration in the industry. Lot M41 is a mix of Red Catuai and Yellow Catuai coffee grown by Martha, the third generation to inherit the farm from her grandmother. Her grandmother started as a hobby has now grown into high quality cherries that Martha has poured her heart and soul into, and which are worthy of CCD processing.

The Static Cherry Process is where they begin to explore newer horizon, leaving tradition behind: 80 hours of fermentation in an anaerobic environment to develop the lactic acid in the cup, giving it more of a darker fruit note and a creamy body. Once fermentation is completed, drying begins at Patio for 20 days. Then the cherries are removed and sorted by density and size. After all, the cherries are again sorted by colour and a final quality check is carried out.

This coffee has dark red fruit characteristics such as ruby grapefruit and red grapes, mature sweetness with a crisp acidity from dried pineapple and dried kiwi. it has dark chocolate aroma and richness that lingers long after drinking.
